ASIAN CUCUMBERS
A delicious sweet & sour cucumber dish! Thanks to Sunny Rodgers for this recipe. Serves 4. Only 36 calories per serving.
Asian Cucumbers
  • 2 medium cucumbers, peeled in stripes
  • 1/4 cup cider vinegar
  • 2 Tbs. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. ground dried mustard
  • ground pepper to taste

Use a vegetable peeler to stripe the sides. Then chop off the ends and discard.

Slice the cucumbers as thinly as you can (the messier and uneven, the better).

Add the cucumbers to a ziploc bag (or tupperware container), throw in all the other ingredients, and shake to mix.

Refrigerate until serving. They are really delicious the next day too!
