WILTED SPINACH & CRAB SALAD
Makes 3 hearty servings. I love this over rice with a few crunchy chow mein noodles on top!
Wilted Spinach and Crab Salad
  • 1 Tbs. oil
  • 1 Tbs. minced scallions (or to taste)
  • 1 1/2 Tbs minced fresh ginger
  • 3 cloves minced garlic
  • 2 Tbs Saki (is fine without this!)
  • 6 Tbs soy sauce
  • 1 1/2 Tbs sugar
  • 3 1/2 Tbs rice wine vinegar
  • 1 6oz bag spinach leaves
  • 2 cans lump crab meat

First, I would read through the recipe and prepare all the ingredients. They heat so quickly that you really should have everything on hand.

Heat wok or heavy skillet over medium heat. Add the oil and heat until hot. Add scallions, ginger and garlic -- toss for 15 seconds or until fragrant.

Add rice wine -- cook for 1 minute longer.

Combine soy sauce, sugar and rice vinegar. Add to wok/skillet along with the crab meat and spinach leaves. Toss until the spinach leaves begin to wilt. Now you are ready to serve!
