Wonderful Lefse

Ingredients:

6 cups Hungry Jack instant potatoes (one 15.3 oz
box) |
|
2 cups Carnation powdered milk |
|
2 Tablespoons sugar |
|
6 cups water |
|
2 sticks of "Bluebonnet" regular
margarine |
|
3 cups flour |
|

Lefse griddle |
|
Lefse stick (for flipping the lefse rounds) |
|
Grooved rolling pin and rolling pin covers |
|
24" pastry board and pastry board cover (this really helps) |

Instructions:

- In a large bowl - mix - the following
ingredients:
6 cups " HUNGRY JACK " instant potatoes ( 1 - 15.3oz box )
2 cups Carnation powdered milk,
2 Tbs sugar
3 tsp salt
- In a kettle heat 6 cups water and 2 sticks " BLUE BONNET
MARGARINE " and pour over the dry mixture. Mix well - until potatoes are all dissolved.
- Cover bowl and refrigerate over night - or at least 6 hours.
- Then mix in ( with pastry cutter or hands)
3 cups flour.
- Divide into portions about the size of a ' small ' tennis ball ' or a lemon.
- Roll out on floured cloth with rolling pin with cloth sleeve on
until thin.
- I bake mine on a 21 " family size electric griddle - two at a time - until light brown spots appear, turning to brown both sides.
The griddle should be set at 375 degrees.
- I store - or freeze - 4 folded up - in a quart freezer bag !
Note: Recipe makes about 30 sheets of lefse !
It is VERY IMPORTANT to use Hungry Jack Potatoes and Blue Bonnet Regular
Margarine !
