Fancy Stacks
Ingredients Required:
2 eggs
2 cups buttermilk*
1/4 cup oil
1-3/4 cups flour
2 tbsp sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Substitute milk for buttermilk by decreasing the milk to 1-3/4 cups, increasing the baking powder to 4 tsp, and eliminating the baking soda.
Directions:
Heat griddle to medium-high heat(approximately 400 degrees).  In a large bowl, beat eggs, then stir in milk and oil.  Add remaining ingredients until large lumps disappear.  Do not over stir!  Lightly grease heated griddle(Safety note:  Do not use non-stick cooking spray on a heated pan-add before heating!).  Pour about 1/4 cup of batter onto griddle per pancake.  When bubbles form in the batter and holes remain after popping in the center of the cake, turn it over. 

Makes about 16 pancakes.
