.  I have a family of six, so these recipes are geared for large families. These are fast and easy recipes that have that country taste!
Chicken Pot Pie

3 1/3 c frozen mixed vegetables(thawed)
2 c cut up cooked chicken
1 lg. can cream of chicken soup
2 c baking mix
1 c milk
2 eggs

1. Heat oven to 400 degrees.  Stir vegetables, chicken, and soup in an ungreased roasting pan.
2. Stir remaining ingredients until blended and pour over mixture in pan.
3. Bake about 30 minutes or until golden brown.  Will feed 8-10 people.

Zesty Pork Chops n' Rice

8-10 small pork chops
3 cups rice (raw)
6 chicken boullion cubes
1 small onion (chopped)
1/2 c bell pepper (chopped)
1 small tomatoe (chopped)
garlic powder and pepper

Peheat oven to 350 degrees.  Heat 6 cups water and dissolve boullion in it.  Put rice, onion, bell pepper, and tomatoe in roasting pan.  Pour boullion mixture in and stir.  Arrange pork chops on top and season with spices.  Cook in oven about one hour.  Will feed 8-10 people.

Hamburger Stew

1 1/2 lbs. hamburger meat
1/2 lrg. onion, cut up
4 beef boullion cubes
1 6oz. can tomatoe sauce
1 can carrots, sliced
2 cans green beans
1 can corn
6 medium potatoes, cut up
basil, garlic powder,bay leaf, pepper, and salt

In dutch oven, heat 6 cups of water to boiling.  Add onion, boullion, and tomatoe sauce. Add spices and turn down to simmer.  Brown hamburger meat , drain and set aside.  Add potatoes to simmering soup and cook until almost done.  Drain vegetables and reserve liquid.  Add all remaining vegetables and meat.  Simmer aproximately 20 minutes adding reserved liquid as needed. Will feed 8-10 people.
Country Corn Muffins

2 c yellow corn meal
2 c flour
1/2 c sugar
8 tsp baking powder
1 tsp salt
2 eggs (beaten)
2 c milk
6 Tbsp vegetable oil

Preheat oven to 450 degrees.  Generously grease muffin pan.  Combine corn meal, and dry ingredients in a bowl.  Mix eggs and milk in separate bowl, then mix into dry ingredients.  Stir in vegetable oil and mix thoroughly.  Pour into prepared pan.  Bake 20-25 minutes or until golden brown.  Yields 12-16 muffins.
One Pan Cake

2 1/2 c all purpose flour
11/2 c sugar
1/2c cocoa
2 tsp baking soda
1/2 tsp salt
2/3 c vegetable oil
2 Tbsp cider vinegar
2 Tbsp vanilla
2 c cold coffee (or water)
1/3 c sugar
1/2 tsp cinnamon

Peheat oven to 350 degrees. Stir together flour, 1 1/2 c sugar, cocoa, soda, and salt in 13" x 9" ungreased baking pan.   Make 3 wells in the mixture.  Pour oil in one, vinegar in one and vanilla in one.  Pour in coffee and stir all with a fork until well mixed.  Spread into an even layer.  Combine 1/3 c sugar and cinnamon and sprinkle half over batter.  Bake in oven for 35 to 40 minutes.  Sprinkle remaining cinnamon sugar over hot cake.  Cool 15 to 20 minutes before cutting.  Makes 6-8 servings.
Chicken n'  Dumplings

4 lbs.broiler-fryer
6 c water
4 chicken boullion cubes
1 onion (chopped)
2 c celery (chopped)
1 lg can cream of chicken soup
2 c baking mix
2/3 c milk
pepper, garlic powder

Bring water to boil in large pot.   Add boullion cubes and stir until dissolved.  Add chicken, onion, and celery.  Turn down to medium and boil for 1 hour or until chicken is done.  Drain chicken and vegetables, reserving liquid.  Return liquid to pot and add soup.  Stir and simmer.  Debone chicken, cut up and return to pot with vegetables.  Combine baking mix and milk.  Drop dough by heaping tablespoons onto simmering chicken mixture.  Cook, uncovered, 10 minutes.  Cover and cook 10 more minutes.  Makes 12 servings.
