Mexican Dip

1 Can Refried Beans
2 Avocados, 2 Tomatoes
2 Tablespoons Lemon Juice
1/2 Teaspoom Salt,  1/4 Teaspoon Pepper
1/2 Cup Sour  Cream
1 Package Taco Seasoning
I bunch Green Onions
1 can of Medium Olives
1 cup Shredded Colby / Jack Cheese
Peel, Pit and Mash Avacados on Bowl with Lemon Juice, Salt and Pepper.
In another Bowl, combine Sour Cream and Taco Mix.
Spread Bean Dip in Large Platter.  Top with Avacado Mixture, then Sour Cream Mixture.
Sprinkle with Chopped Onios, Tomoatoes and Olives.
Cover with Cheese.
Refridgerate until serving

Artichoke Dip

1 can of Artichokes 8 - 10 count
1/2 Cup Shredded Colby / Jack Cheese
1/4 Cup Kraft Parmesan Plus ( Cheese and Breadcrumbs )
Garlic Clove ( minced )
1/2 Cup Helmann's Light ( less calories that Low Fat ) Mayo
Dash of Worcestershire  Sauce
!/4 Teaspoon Lemon Juice
Parsley
Almond Slivers ( optional )
Cut up Artichokes and squeeze out excess juice. 
Mix well with other ingredients.
Place mixture in glass cookware and sprinkle with almonds.
Bake at 350 for 20 to 30 minutes

Stuffed Mushrooms

Package of Mushrooms
6-8  Strips of Bacon
1/2 Cup of Breadcrumbs
1/2 Cup Shredded Cloby  /  Jack Cheese
1 Garlic Clove ( minced )
Parsley
Pepper
Cut up Bacon and Mix well with other ingredients.
Stuff Mushrroms and place stuffing side up in greased glass pan. 
Dap butter in four corners and middle of pan.
Cover tightly with foil.
Bake at 350 for 20-30 minutes

Cucumber Salad

4 Medium Cucmbers
1 Large Sweet Onion
1 Cup Sugar
1 Cup Water
1/2 Cup Cider Vinegar
1/2 Cup Vegetable Oil
Celery Seed
Peel Cucumbers. Score lengthwise with a fork.
Slice cucumbers thin and place in salted water.
Slice Onion thin and place in salted water. Let stand 1 - 2 hours.
Cook Sugar Water over Low Heat until Sugar is dissolved.  Cool.
Add Vinegar and Oil to Cooked Sugar Syrup, Mix Well.
Drain and RInse Cucmber and Onion Slices. 
Pour Vinegar and Oil Mixture over to cover.  Sprinkle with Celery Seeds.
Refrigerate overnight.
A Zip-loc bags works well to marinate.  Make sure it's sealed and put in container for back up.
