~~ I call these cupcake cookies because they have the consistency of a cupcake-soft and flavorful.~~

1 box flavored cake mix (I have tried most all flavors--strawberry is my favorite)

1/2 cup vegetable oil

1 egg

1/2 cup applesauce

1. Mix all ingredients together.
2. Drop by teaspoonfuls onto a lightly greased cookie sheet.
3. Bake at 350 degrees for 8-10 minutes. Will be puffy and look slightly moist. Remove pan from oven and let sit in cookie sheet for 1 minute. Remove from pan and cool on toweling paper. (or sneak a few while warm!)
