Rice and Black Bean Bake

~~ This hearty dish can function as a side or as a main dish. Due to my husband's love of this recipe, a 9x13 pan only lasts one meal at my table.~~


1 can diced tomatoes, undrained

1 can black beans, drained and rinsed

3 cups cooked rice

1/2 c. shredded cheddar

3 Tbs. ranch dressing


1. Preheat oven to 350 degrees.


2. In medium bowl, mix all ingredients. Spoon into 9x13 pan.


3. Sprinkle another 1/2 c. shredded cheddar on top. Bake for 20 minutes or until top is bubbley and heated through.
