Spinach Pie

~~ The great combination of cream cheese and Parmesan make this pie a winner!~~


9in. unbaked pie crust

3 oz. cream cheese

1 cup half and half

1/2 cup soft bread cubes

1/4 cup grated Parmesan

2 eggs, beaten

1 cup cooked spinach, drained

4 Tbs. butter

1/2 lb. mushrooms

1 large onion, chopped

1tsp. tarragon

3/4 tsp. salt

Preheat oven to 400 degrees.

In large mixing bowl, mash cream cheese with a fork and gradually blend in half and half. Add bread cubes, cheese and eggs, beating with a wire whisk to break up bread. Stir in spinach.

In skillet, melt butter and saute mushrooms and onions until softened. Add tarragon to skillet mixture and combine it with cheese mixture. Salt to taste. Pour into unbaked pie crust.

Bake on lowest rack in oven for 25 minutes. Let it stand for 10 minutes after baking before serving.
