ASIAN NOODLE SALAD



This recipe was given to me by a friend.

Asian Noodle Salad


Dressing
1/3 cup soy sauce
1/4 cup white wine vinegar
2 tablespoons sugar
2 tablespoons sesame oil
1 piece ginger, grated (optional)
4 cloves garlic, grated
2 teaspoons chili flakes


300 grams spaghettini or vermicelli noodles, cooked
1 medium carrot, grated or shredded


Other optional additions:
Salad greens
Sugar snap peas
Diced celery
Cooked chicken


Combine all dressing ingredients until ready to use; stir in spaghettini and
carrots. Dressing can be made up to one week in advance.
Note: this salad gains flavour overnight from marinading in the dressing.
