Baked Bean Casserole

1 pound white beans
Water -- to soak
4 cups water
2 cups stewed tomatoes -- canned
2 medium onions -- diced
1 medium green pepper -- minced
3 tablespoons honey -- or
pancake syrup, low calorie
Place beans in large bowl and cover with water. Soak for 8 hours or
overnight at room temperature.
Rinse beans and discard water. Put the rinsed beans in pot, add 1-quart
fresh water and bring to boil. Reduce heat, cover pot and simmer 45
minutes.
Place cooked, drained beans in casserole, and add the rest of the
ingredients. Stir. Cover casserole and bake at 350°F. for 1 hour, or until
tender.
