Hum Serving Size : 8 Preparation Time :1:00 Categories : Family Favorites Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium red cabbage (about 2 pounds) 1 cup water 6 tablespoons apple juice, from frozen concentrate -- defrosted 1/2 cup vinegar 1 teaspoon salt 2 teaspoons cornstarch 1 tablespoon water Cut cabbage into four sections; remove core and shred finely. Wash cabbage in warm water; drain; place in a pot with the water. Bring to a boil, then simmer, covered, for 40 minutes, stirring occasionally. Uncover. Cook on high heat, stirring often, until all liquid is absorbed. Add apple juice, vinegar and salt and stir to mix. Cover and cook 10 minutes, stirring occasionally. Combine cornstarch and water until smooth. Stir cornstarch mixture into hot mixture. Cook and stir until it thickens and boils.
