                          Peppermint Candy Canes

   2      cups          white sugar
     1/2  cup           water
     1/2  cup           light corn syrup
     1/4  teaspoon      cream of tartar
     3/4  teaspoon      peppermint extract
     3/4  teaspoon      red food colouring

Combine sugar, water, corn syrup and cream of tartar.  Heat, stirring until
sugar dissolves. Cook without stirring to the light crack stage (260°F.),
and remove from the heat and add peppermint extract. Divide into two
portions, adding colouring to the one part. Pull each separately and twist
