                               Chicken Pie

   1       -            9" pie shell
   3      cups          chicken breast halves without skin -- cooked
   1 1/2  cups          frozen peas
   1 1/2  cups          frozen carrot slices
   1      can           mushrooms -- undrained
     1/2  cup           chopped onions
     1/2  cup           water -- or more
     1/2  cup           flour
                        Salt and pepper -- to taste
   3      cups          lowfat chicken broth or bouillon
					

Heat medium nonstick frypan over medium heat.  When hot, add a small amount of water and onions.  Sauté onions until lightly browned.  Drain mushrooms, and then add to onions.

Meanwhile, in large nonstick frypan, add flour, salt and pepper; gradually stir in a small amount of the chicken broth.  Turn on heat to medium, stirring constantly with whisk, and adding more broth as mixture thickens, until all broth is added.  Transfer sauce mixture to large saucepan, and toss in onions and mushrooms.  Stir in chicken, peas and carrots.  Bring to a boil, whisking constantly until mixture is thickened.

Spoon into large casserole dish and cover with pastry top, making slits to let steam escape.  Bake at 450°F. for 10 minutes, then reduce heat to 350°F. and bake until pastry is nicely browned and cooked (about 40 minutes).
