                      Dressing For Chicken Or Turkey

  20                    whole wheat bread slices -- stale
  20                    white bread slices -- stale
   6      stalks        celery -- finely diced
   6      medium        onions -- finely diced
     1/2  cup           water
   2      teaspoons     salt
     1/2  teaspoon      pepper
   2      teaspoons     poultry seasoning -- or
                        sage
   1      teaspoon      ground ginger

Break bread into very small pieces (food processor is great for this job, also to do the vegetables).  Mix all ingredients together and if it seems very dry, sprinkle with a little water, being careful not to make it wet.  Just before putting turkey in the oven, fill it with the stuffing and fasten closed with skewers and string.  Dressing may be made ahead and frozen until day it will be used.
