                            Pineapple Muffins

   2      cups          all-purpose flour
   3      teaspoons     baking powder
     1/2  teaspoon      baking soda
   2                    egg whites
   2      tablespoons   skim dry milk
   2      tablespoons   unsweetened pineapple juice -- defrosted
  14      ounces        pineapple chunks in juice -- drained and reserved
   4      tablespoons   unsweetened pineapple juice

Sift together flour, baking powder and baking soda.  Beat egg, milk powder, vegetable oil, fruit juice, pineapple, and pineapple juice until well blended.  Add dry ingredients.  Stir just enough to moisten flour.  Fill oiled muffin cups 2/3 full.  Bake at 400°F. for 20 minutes or until brown.
