                   Low-Fat Homemade Scalloped Potatoes

   3      medium        potatoes -- peeled
                        - and sliced thin -- 3 to 4
   1      medium        onion -- chopped
     1/4  cup           all-purpose flour
                        Salt and pepper -- to taste
     1/2  cup           skim milk
					

In an oval or round microwave-proof dish, place a layer of potatoes.  Top
with onions and then flour and salt and pepper to season. Repeat layers
until top of dish is reached (about 3 layers - top layer should be potatoes).
Pour milk into dish until it reaches about halfway up dish. Gently shake to
coat flour layers. Microwave on HIGH for 15 to 17 minutes (turn halfway
if your microwave doesn't have a turning tray), or until potatoes are
cooked. (Can also be cooked in oven at 350°F. for about 45 minutes.)
Jalapeno peppers or green peppers could be added, if desired. - - - - - - - - - - - - - - - - - - Per serving: 177 Calories; less than one gram Fat (2% calories from fat);
