CONVENTIONAL OVEN: Sauté onion in butter until tender. Remove from heat; stir in spinach. Sprinkle half the cheese over the crust. Top with half the spinach, then peppers. Sprinkle with remaining cheese and spinach. Pour remaining eggs over all. Top with tomatoes. Bake at 400ºF. for 40 to 45 minutes until set.
MICROWAVE OVEN: Melt butter, then stir in onion, garlic, peppers; microwave on HIGH 3 minutes. Sprinkle half the cheese over crust. Top with half the spinach, then onions and peppers. Sprinkle with remaining cheese and spinach. Pour remaining eggs over all. Top with tomatoes. Cover with waxed paper; microwave on HIGH 5 to 8 minutes, then MEDIUM 15 to 18 minutes, turning at half-time.
Note: Cool 5 to 10 minutes before cutting. Makes 6 to 8 servings.
