4 1/2 cups cooked rice, no added fat or salt -- * see note
1 medium green or red pepper -- cubed
1 medium onion -- chopped
10 ounces sliced mushrooms -- drained
12 ounces "Summer Crisp" corn -- drained
28 ounces tomato sauce -- canned
Salt
Pepper
Dried oregano
Dried basil
Garlic powder -- ** see note
Hot chili peppers -- optional
Place rice in microwave and cook according to directions in notes.
In a large Dutch oven lightly cook green pepper, onion and mushrooms with
a little of the mushroom or corn juice. When softened, add tomato sauce
and corn to Dutch oven and bring to a simmer. Season to taste.
Stir and heat, covered, for 10 minutes or until thoroughly heated.
