Anchor Steam

One of our most favourite beers

From San Francisco

Third Batch

Started 17 Aug 03

Bottled 24 Aug 03

This was our third Anchor Steam - a beer style best brewed in the cooler months

We followed the same recipe principles as our first batch, but some ingredients were a little different - good move - it turned out to be our best yet - right colour, taste, and retains a good head

Ingredients

1.7 Kg Can Gold Rush Brand Mabbott's Ale

1 Kg Coopers Extra Pale Malt Extract

250 gms Crystal Malt

2 oz German Perle (Northern Brewers style ) Hops

1 oz Cascade Hops

1 pkt Ale Yeast

Method

Boil 1/3 of German Perle hops in 2 litres of water  for 20 mins

Next 1/3 added for another 20 mins boil

Last 1/3 added for another 20 mins boil

Added 1 oz finishing hops (Cascade) remove from heat (don't boil)

Cover wort

During last phase of hops preparation - add 250 gms crystal malt to  2-3L water @ 65-72 deg C

Let steep for 20 mins

Strain hops and malt liquors into fermenter

Sparge with hot / cold water

Add warmed can of extract and pale malt

Top to 23 litres with hot / cold water to reach yeast pitching temp

(you may need to let wort cool if you have overdone the warm ingredients)

Pitch yeast

Ferment this beer style at a lower temp (18 deg C)

Facts and Figures

OG: 1.039

FG target: 1.018

FG reached: not recorded

Taste Test - A great beer and one to really sort out those who pretend to be beer connoisseurs from those who really appreciate a good drop. This one is complex - you can taste the ingredients - and bitter - those hops are really working hard.  A good 'first beer' on a hot day
