D&B Irish Christmas Ale

Bottled: 4 Oct 98

 

Ingredients

Beer Makers Irish Stout Mix

500 gms Australian Yellow Box Honey

1 Kg Light Malt Extract

1.5 Kg Amber Malt Extract

5 Cinnamon Sticks crushed

2 teaspoons Allspice

1 Clove

Zest of 6 Oranges

Juice of 6 Oranges

6 oz Chopped Ginger Root

50 gms Halletauer Hops

2 pkts Beer Makers Yeast

 

Method

Boil 25 gms Hops in 3L water for 30 mins

Add remaining 25 gms Hops and boil for another 10 mins

Steep for 20 mins - strain into fermenter

Bring Honey, Orange Juice and Spice mix to boil, simmer for 30 mins

Steep for 20 mins - strain into fermenter

Add Stout Mix

Top with cold water

Pitch Yeast

OG 1.040 FG: 1.022

Alcohol around 8%

23 Litres

 

Analysis

Heavy fermentation for first 3 days then quietened down quickly

High ambient air temps (24-27 C) probably speeded up brew

Activity all but stopped after 5-6 days

Taste during bottling - strong cinnamon and allspice taste with feint orange background

Bottled in Grolsch type bottles with special labels for Christmas gifts

This is pretty much a love it or hate it beer as it has some very strong fruit and spice flavours. Once you acquire the taste, it goes very well with Christmas Pudding

If we make it again, we will probably cut back on some of the stronger spices
