German Pow-Wow Monthly Recipes:

January: Sauerkraut und Speck

  • 4 lbs. fresh arm picnic pork

  • 1 tsp. salt

  • 3 qts. sauerkraut

  • 2 tbsp. brown sugar

  • 1 tsp. dried rosemary leaves

  • 1 large onion, diced

  • 2 cloves garlic

  • salt and pepper

Preheat oven to 325 degrees F. Rub the pork with garlic and rosemary; sprinkle with salt and pepper. Place pork in baking pan, fat side up. Add enough water (about 1/2 c.) to keep from baking dry. Roast pork for 2 hours, 15 minutes (or 30-35 min. per lb.). Mix sauerkraut, brown sugar, and onion. Bake 15 minutes more. Makes 8 servings.

 

February: Schnitz und Knepp

  • 1 qt. dried apples

  • 3 lbs. smoked ham

  • 2 tbsp. brown sugar

  • a pinch of cinnamon

  • a few cloves

  • 2 cups flour

  • 4 tsp. baking powder

  • 1 tsp. salt

  • pepper

  • 1 egg, well beaten

  • 3 tbsp. melted butter

  • 1/2 c. milk

Cover dried apples with water and soak overnight. In the morning, cover the ham with water and simmer for 2 hrs. Add the apples and water and simmer for about 1 hour. Add brown sugar, cinnamon, and cloves. For the dumplings, sift flour, baking powder, salt, and pepper together. Stir in the egg, butter, and milk until lightly blended. Drop by tablespoons into simmering ham and apples. Cover and cook over med. heat for 20 minutes. Serve hot. Makes 8 servings.

March: Funnel Cakes

  • 1 egg, beaten

  • 2/3 c. milk

  • 1 1/4 c. flour

  • 2 tbsp. sugar

  • 1 tsp. baking powder

  • 1/4 tsp. salt

  • funnel with 3/8 to 1/2 inch hole

  • hot oil (375 degree F)

Beat the egg and mil together. Blend the flour, sugar, baking powder, and salt and add the milk to the mixture. Beat until smooth. Hold a finger over the hole in the funnel and fill the funnel with batter. Position the funnel over hot oil as close as possible; remove finger & drop batter into fat. Use a circular movement fromt he center outward to form a  spiral cake about 4 inches in diameter. Close the hole again. Open the hole, then draw another spiral in oil. Remember the batter puffs up, so don't crowd the cakes. Fry the cakes until golden brown, then remove with slotted spoon. Place on paper towels to absorb excess fat. Sprinkle with confectioner's sugar, brown sugar, or syrup. Makes about 24 cakes.

April: Rice Pudding
  • 2 eggs. separated

  • 1/2 c. sugar

  • 2 c. milk

  • 1 c. cooked rice

  • 1 tbsp. butter, melted

  • 2 tbsp. confectioner's sugar

  • 1 tsp. nutmeg

  • 1 tsp. cinnamon

Preheat oven to 325 F. Beat egg yolks and mix with sugar, milk, and rice. Mix in butter. Pour into one-quart baking dish. Beat egg whites until frothy; add confectioner's sugar and spread on top of rice. Sprinkle with cinnamon and nutmeg. Bake about 25 min. If you like a sweeter pudding, increase sugar to 3/4 cup. Makes 6 servings.

May: Hootsla (Egg Bread)
  • 1/2 c. butter

  • 1 bag stuffing or 8 c. day-old bread, cubed

  • 3 beaten eggs

  • 1/2 c. milk

  • 1/2 tsp. salt

  • pepper

Melt butter in a large pan over low heat. Add the bread cubes and stir until lightly coated with butter and beginning to brown. Pour mixture over bread cubes. Cook over medium heat until it sets and is golden brown. Makes about 6 servings.

 

 

June: Schnitzel Beans
  • 2 lbs. fresh green beans, cut in 1 in. pieces

  • 6 slices bacon, chopped

  • 2 lrg. onions, diced

  • 1 clove garlic, chopped

  • 1 c. hot water

  • cayenne pepper

  • salt

  • 3 med. tomatoes, small cubes

Mix all ingredients, except for tomatoes, and cook over medium heat, uncovered, for about 1 hour. Add tomatoes and cook 2 more hours, adding water when necessary. Make about 8 servings.

 

July: Smierkase

Serve cottage cheese ringed with dabs of apple butter

 

 

August: Red Devil Cake
  • 2 c. flour

  • 1 tsp. baking soda

  • 1/2 tsp. salt

  • 1/2 c. butter

  • 1 1/2 tsp. vanilla

  • 1 1/2 c. sugar or firmly packed brown sugar

  • 2 eggs, beaten

  • 3 (1 ounce)  square unsweetened chocolate, melted and cooled

  • 1 c. milk

  • 1-2 tsp. red food coloring

Preheat oven to 350 F. Grease and flour two round 9-in. layer cake pans. Sift flour, baking soda, and salt together. Set aside. Cream butter and vanilla together until softened. Add sugar slowly, creaming after ea. portion. Add eggs, beating well. Blend in cooled chocolate. Add flour mixture and milk alternately, beating until smooth. Blend in food coloring. Bake for 30-35 minutes. Cool & frost. Makes about 10 servings.

September: Pickled Eggs

  • 2 c. red beets

  • 1/4 c. brown sugar

  • 1/2 c. vinegar

  • 1/2 c. cold water

  • 1/2 tsp. salt

  • 1 stick cinnamon

  • 3 cloves

  • 6 hard-boiled eggs

Boil beets until tender; drain. Boil remaining ingredients, except for the eggs. Add the beets to this liquid, cover, refrigerate for 3 days. Add hard-boiled eggs to the liquid, cover, and place in refrigerator for 2 days. Makes 6 servings.

October: Ob'l Puffers (Apple Friters)

  • 1 c. flour

  • 1 1/2 tsp. baking powder

  • 3 tbsp. confectioner's sugar

  • 1/4 tsp. salt

  • 1/3 c. milk

  • 1 egg, beaten

  • 2 med. apples, sliced thin

  • hot oil (365 F)

Mix the dry ingredients together in a large bowl. Stir in milk and egg. Fold in apples. Drop the batter by spoonfuls into the hot oil and fry until golden brown. Turn fritters halfway through frying. Drain on paper towel. Makes about 1 1/2 dozen.

November: Corn Bread
  • 1 c. flour

  • 1 c. yellow corn meal

  • 1/2 c. sugar

  • 1 tbsp. baking powder

  • 3/4 tsp. salt

  • 1 c. milk

  • 1 egg

  • 1/2 tsp. vanilla

  • 1/2 c. canned corn, drained

  • 3 tbsp. butter, melted

  • 1/4 tsp. nutmeg & cinnamon mixture

Preheat oven to 425 F. Mix the flour, corn meal, sugar, baking powder, & salt in large bowl. Add the milk, egg, oil, and vanilla. Fold in corn. Pour in round 9-inch cake pan. Sprinkle with cinnamon and nutmeg. Bake about 25 minutes. Makes 6 servings.

December: Apies Cakes
  • 1 1/2 c. flour

  • 1 c. sugar

  • 1/2 tsp. baking soda

  • 1/3 c. butter

  • 1/2 c. sour cream

Preheat to oven 400 F. Mix together the flour, sugar, and baking soda. Cut in the butter with a pastry blender. Mix in sour cream. Roll the dough about 1/4-inch thick on floured surface and cut into 2-inch squares. Draw bind runes for good fortune & health. Bake on cookie sheets for about 7 minutes. Sprinkle with brown or white sugar. Makes about 2 dozen cookies.
