The Italian site Caltanet Cinema posts an intereview with Rose Byrne (Dormé in Episode II). She delves a bit into what it was like to work on the digital set... along with it's director, George Lucas:

Talking about Hollywood... what about working with George Lucas for Star Wars: Episode II? Christopher Lee said to me that Lucas is very kind and happy to work with actors...
He's right. George is very gentle, kind and relaxed. Very relaxed. He's really friendly. Down to earth. I understand why Star Wars became so important for the Western Society. The first day I came on the set, he saw me straight away, came up immediately and said "Hi, I'm George Lucas, you're going to play Dormé, how are you?". Very relaxed.
Did you enjoy yourself playing the little role of Dormé?
It's a technical film, not charachter driven. I have a very, very small part but it was nice because George always talked to you.
Did you act against nothing or with real actors and things?
Both. With real actors, but I had to react to digital things too.
How was for you acting against nothing and/or nobody?
Just... we'll see... I really don't know.
Have you panicked?
The first time... the first day... I did panic a bit.
Are there some techniques that you've learnt about these acting scenes?
No... I think that everybody just does their best. You have to imagine whatever is happening in front of you, whatever it looks like. For me it was very easy but for the others like Natalie Portman, Samuel L. Jackson and Ewan McGregor was more difficult because they had much bigger parts than me.
