Fried Rice
INGREDIENTS:
7½ Cups Rice, uncooked                                                  3 Lbs. Bacon,
¼ Lb. Margarine (1 Stick), melted                                     4-5 Lbs. Ham
2 Large Onions, chopped                                                  18 Eggs, scrambled
                                             Salt and Pepper to taste
PREPARATION:
Cook rice according to directions; set aside.
Cook bacon until crisp, drain on towels then crumble; save drippings for later.
Microwave onions until transparent.
Cut ham into small cubes.
Heat bacon drippings and margarine in a very large pot.
Add ham and cook on medium heat for ½ hour.
Add cooked onion and blend well; remove from heat.
Add cooked rice, crumbled bacon, salt and pepper; blend well
In a large skillet scramble eggs
Gently blend scrambled eggs into rice mixture.

Serves 25-30

NOTE: For a change can add cooked peas and carrots
