Panettone Christmas Cake |
This version of an Italian Christmas favorite features dried or candied pineapple and citron in place of the traditional raisins and candied fruit peel. Dress up the loaf with the Glaze recipe (see recipe below) and additional chopped candied citron. |
1-POUND LOAF 1 1/2-POUND LOAF INGREDIENTS INGREDIENTS 2/3 cup milk 3/4 cup plus 2 tablespoons 1 large egg 1 large egg 1-tablespoon butter or margarine cut up 2 tablespoons 3/4 teaspoon salt 1 teaspoon 2 cups bread flour 3 cups 1/4 cup coarsely chopped dried or candied 1/3 cup pineapple 1/4 cup chopped candied citron, 1/3 cup drained of syrup 1 teaspoon Anise Seed, crushed 1 1/2 teaspoons 1 1/2 teaspoons FLEISCHMANN'S Bread Machine Yeast 2 teaspoons |
Use the 1-pound recipe if your machine pan holds 10 cups or less of water. Add ingredients to machine pan in the order suggested by manufacturer, adding pineapple and citron with flour. Recommended cycle: Basic/white bread cycle; light or medium/normal color setting.
