#79 Angel Wings Hellesbock
10.5 lbs Pilsner Malt
5.5 lbs Munich Malt
5/8 oz Yakima Magnum pellet hops (13.1%AA)
                                           (60 min)
1/2 gallon starter WLP-833 German Bock Yeast
- Strike crushed grains with 6 gallons 156F water.  Hold 147F for 20 minutes.
- Add 8 quarts boiling water.  Hold 156F for 1 hour.
- Sparge to 7.5 gallons.
- Boil one hour, hopping as indicated.
- Chill wort, then pitch yeast.
Notes:
- Brewed 25 January 2009.  Mash temps as given are what I used; it was supposed to be a single-infusion at 156F.  Also missed sparge volume, got 6-1/3 gallons.  Ended up OK ('protein' rest bumped up efficiency), volume made up for with starter.  OG: 1.087 (~85% efficiency).

#80 SMaSH French Pale Ale
12 lbs Pilsner Malt
1/2 oz Nugget pellet hops (13.7%AA) (60 min)
1/2 gallon starter WLP-072 French Ale Yeast
- Strike crushed grains with 21 quarts 140F water.  Hold 130F for 30 minutes.
- Add 11 quarts boiling water.  Hold 155F for 1 hour.
- Sparge to 7.5 gallons; caramelize 1st runnings during sparge.
- Boil 65 minutes, hopping as indicated.
- Chill wort, then pitch yeast.
Notes:
- Brewed 22 February 2009.  OG: 1.058 (78% eff)
Initial run with the new sparge arm; works well.  Need to get a better 'seal' between the 'in' hose and the sparge fitting, but some teflon tape will help.

12 lbs Pilsner Malt
1 lb CaraWheat Malt
1/2 oz Nugget pellet hops (13.7%AA) (60 min)
1/2 gallon starter WLP-072 French Ale Yeast
- Strike crushed grains with 21 quarts 140F water.  Hold 130F for 30 minutes.
- Add 11 quarts boiling water.  Hold 155F for 1 hour.
- Sparge to 7.5 gallons; caramelize 1st runnings during sparge.
- Boil 65 minutes, hopping as indicated.
- Chill wort, then pitch yeast.

- Brewed 29 March 2009.  OG 1.054 (72% efficiency)

7 lbs Pilsner Malt
1 lb Crystal 80L
1 lb Special Roast Malt
3/4 lb Crystal 120L
2 oz Pale Chocolate Malt
7/8 oz Kent Golding pellet hops (5%AA) (60 min)
1/2 gallon starter Windsor Ale yeast
- Strike crushed grains with 15 quarts 167F water.  Hold 153F for 60 minutes.
- Sparge to 7.5 gallons.
- Boil 60 minutes, hopping as indicated.
- Chill wort, then pitch yeast.

- Brewed 26 April 2009.  OG 1.053 (80% efficiency)
