Egyptian Rice shared by mommyrnc 1 lb lean ground meat 1 small onion, chopped 2 Tablespoons olive oil 2 cans beef broth 2-3 Tablespoons soy sauce 1 teaspoon Worcestershire 1 jar sliced mushrooms 1 cup raw rice salt & pepper to taste sour cream or plain yogurt slivered almonds, toasted Brown meat & onion in olive oil. Add remaining ingredients. Cover & simmer until rice is done, about 20 minutes. To serve, divide into individual serving dishes & top with dollop of sour cream or plain yogurt & slivered almonds. 4 servings Egyptian Marinade shared by mommyrnc 1/2 cup olive oil 1 Tablespoon ground cumin 1 Tablespoon ground coriander 1 onion, grated 3 cloves garlic, minced 1 tteaspoon cayenne pepper salt & pepper to taste May be used for chicken, beef, or lamb. Cut meat into 1 inch cubes & place in shallow non-aluminum container or ziploc bag. Combine ingredients & pour over meat. cover & marinate in refrigerator for at least 6 hours, or overnight. Thread meat onto skewers, & place on grill rack or broil or outdoor grill. Serve with pita bread & lemon wedges. |
Asbusa shared by mommyrnc 2 lb Cream of Wheat 2 1/2 cup sugar 3/4 lb butter 16 oz plain yogurt almond halves In large bowl, mix Cream of Wheat & sugar. Add butter & mix by hand, rubbing the butter, sugar, & cream of wheat between your palms for at least 10 minutes until mixture is well blended. Add yogurt & mix with your hands until a smooth dough forms. If it feels dry, add 1 T water at a time until it feels like pie dough in your hands. Pat dough into a 13x9x2 pan. With a sharp knife, slice the dough into 2x2 in squares or diamond shapes. Press 1 almond half onto the surface of each piece. Bake at 350 for 30-40 min until golden brown. |
