Candied Apples |
1 1/2 cups sugar 1 cup light corn syrup 1/2 tsp. ground cinnamon 1/2 tsp. red food coloring 6 large Red Delicious apples (about 3 lbs.) 6 wooden popsicle sticks In medium pot over high heat, bring sugar, corn syrup and 1 cup water to a boil, stirring frequently. Boil without stirring, until candy thermometer inserted into mixture regesters 285 degrees (soft crack stage), 15 - 20 minutes. Using wooden spoon, stir in cinnamon and food coloring. Meanwhile, line jellyroll pan with wax paper; coat with cooking spray. Remove stems from apples and insert sticks. Dip apples into candy mixture to coat evenly, allowing excess to drip back into pot; transfer to pan. Let stand until cooled and coating hardens, about 25 minutes. Store uncovered in refrigerator for up to 2 days. For easy cleanup, fill pot with water and bring to a boil over high heat;boil until candy loosens and melts.
