Meat Pie also known as Touche or Pirogue |
1. In hot shortening in large skillet, saute oniion until soft and tender (about 5 minutes.) Remove from skillet and set aside. 2. Shape meat into large patty. In same skillet, saute patty (about 5 minutes) or just until brown; turn and brown other side. remove from heat. Break up meat with a fork;sprinkle with salt and pepper. 3. Chop eggs coarsely and set aside. 4. Preheat oven to 425F. Prepare piecrust mix as package label directs. Shape into ball; divide in half. 5. On lightly flourred surface, roll out half of pastry into 11 inch circle. Use to line 9-inch pie plate. 6. Roll out remaining half of pastry into 11 inch circle. 7. Turn half of the meat into pie shell. Top with half of the onions, then eggs, remaining meat, and onions. Dissolve boulion cube in 1/4 cup water; drizzle over onion. 8. Adjust top crust; fold edge under bottom crust; press together tightly and crimp decoratively. Prick top crust in several places with fork; brush with milk. 9. Bake about 35 minutes, or until crust is golden and crisp. |
1 Tbls. shortening 1 cup chopped onion 1 lb. beef round, ground 1/4 tsp. salt 1/8 tsp. pepper 2 hard-cooked eggs 1 pkg. (11 oz.) piecrust mix 1 beef boulion cube milk |
Serve hot. Makes 6 servings. |
