Burek |
Burek is very delicious dish.... it is made of layers of dough and filled with mincemeat and boiled eggs and parsley.. Ingredients: 2 cups all purpose flour or 1 cup all purpose flour+1 cup wholewheat flour 1/2 tsp salt 1 cup water for mixing Filling: 1 lb. mince meat,1 medium onion,1/2 tsp blackpepper, 1 tsp salt,one bunch parsley(washed and chopped), 5 boiled eggs,one TBs pine seeds(as variation),1/2 cup ghee. Procedure: -Sift flour and salt. -Add water gradually and work into flour until the dough is nice and soft. -Rub your hands with oil and cut the dough in half making them into orange sized balls. -Put in oiled pan and cover with plastic bag and leave to rest for an hour. -Meanwhile get the filling ready: -Add chopped onion to minced meat,add salt and pepper,then stir and leave on fire until done. -when the meat is cooled add the chopped parsley and pine nuts. -Spread a clean bedsheet on the table and take the one of the orange sized doughballs and cover the rest, put some flour on the dough and spread on the bedsheet using your hands as if you are patting it firmly yntil the dough is round and its size is like a big pita bread. -Put the spread dough on one arm and use the other hand to try to pull the dough from the bottom and the sides ,then turn the dough to your other arm and do the same thing,repeat changing hands until the dough is nearly see through. -Put the dough on the sheet and try to pull the sides to make it round and leave 10 minutes to dry. -Using the pan you will be baking in cut rounds as shown in the picture . -Repeat with the other orange-sized balls until you are through with the dough. -Rub butter or oil or ghee in the pan and put one semi-dry circle after the other,while putting some ghee or oil between the layers(4-5 pieces). Do the same thing with another 4-5 pieces in another pan of the same size. -Put on range-fire and let brown(you could put in the oven) but on top of the range is better ,until golden from both sides. -Put on top of the golden dough in of one of the pans mince meat mix and some sliced boiled eggs(see photo). -Take the other golden pastry from the other pan and put on top of the filling. -Cut to 6-8 wedges and serve hot in small plates with salad. |
