Spinach pastries:(originally from Syria) Ingredients: 2 cups sifted flour,1 cup milk, 2 tsp yeast (in some water and a spoonful of sugar), 1/3 cup olive oil.1/4 tsp salt Filling: 3 bunches spinach(washed and chopped) 1 medium chopped onion 1/4cup pine seeds Juice of two lemons 1 tsp summac 2 TBs olive oil 1/2 tsp black pepper salt Preparation -Put the flour in a deep bowl,add the salt and oil and rub with your fingers. -Add yeast and milk gradually and knead well until you get a firm smooth dough. -Cover with plastic sheet and leave in warm place until double its bulk. -Meanwhile prepare the filling: *Rub the chopped spinach with some salt and wash it then squeeze gently with hand. *Add the chopped onion to the washed spinach. *Add the pine seeds,black pepper,salt,lemon juice and olive oil and stir. -Cut the dough into apricot sized balls and put in covered pan so as not to dry. -Spread each ball into a circle and put the filling in the middle ,close from three sides so as to get the trinagular shape(as in picture)and press. -After finishing the whole batch put the pastries in an greased pan and put in the oven until golden brown. *some people like to brush some egg or milk on top of each pastry to get a shining golden appearance. |

Yaghmush:(originally from Turkistan) Ingredients: 2 cups sifted flour, 1/4 cup corn oil, 1 egg, 1/4 tsp salt, warm water for kneading. Filling: 1 lb. minced meat 3 medium chopped onions 1 small tomato diced 1/2 tsp black pepper salt Preparation: -Put the flour and salt in a bowl and add the oil...rub with fingertips until oil is absorbed by the flour. -Add the egg and warm water and knead until you get a firm smooth dough. -Rub some oil in your palm and cut the dough into small apricot-sized-balls,put in an greased pan,cover and leave to rest in a warm place until doubled. -Put the raw mincemeat in a bowl and add the finely chopped onion and tomato,salt and pepper,then mix well. -Spread each ball of dough and fill with some of the filling then fold from the two sides then from the other two sides to form a rectangle. -Proceed the same way with the whole batch. -Put in a greased pan with folded face downwards and brush with eggs or milk. -Put in hot oven until done. Variations:some people add grated carrots and others add grated pumpkin to the minced meat . |
