Basic Fish Batter
yield: 8 fillets

Wet Ingredients:

1 egg
2 Tablespoons of buttermilk

Beat the eggs and buttermilk together to make the batter.

Dry Ingredients:

3 Tablespoons of corn starch
3 Tablespoons of corn meal
4 Tabespoons of flour
1 teaspoon on onion powder
A pinch of salt

Place all dry ingedients in a blow and mix them together.

Instructions:

Dip fish in batter first then coat with dry ingredients.

Shake excess coating from the fish and proceed to fry.  You can either pan fry the fish on medium-high heat with a small amount of oil in the bottom of the pan, or deep-fry for five minutes at around 350 degrees.
