Macadamia Salmon with Watermelon Salsa |
This is not an everyday dish, but makes a tasty treat for special occasions.
Ingredients: 3 teaspoons minced garlic 1 cup finely crushed macadamia nuts 1/2 cup shredded coconut 2 eggs 4 salmon filets, 4 to 8 oz. each Lemon-flavored cooking spray 2 cups diced watermelon 1/2 cup diced red onion 1 tbsp. chopped fresh cilantro leaves 2 teaspoons Caribbean Jerk seasoning blend Directions: 1. Preheat oven to 350 degrees. In a small bowl, mix garlic with crushed nuts and coconut, set aside. 2. In another bowl, whisk eggs. Dip salmon filets into eggs to coat, then into macadamia-garlic mixture, coating both sides. 3. Spray a 9x13-inch-baking dish with lemon-flavored nonstick spray. Arrange filets in single layer. Bake until fish is opaque when center is pierced with tip of knife, about 15 minutes. 4. While fish bakes, make salsa. In a small bowl, combine diced watermelon, red onion, cilantro and jerk seasoning. Serve salmon topped generously with watermelon salsa. |
