Baked Coon and Sweet Potatoes 1 Coon salt and pepper to taste 3 minced garlic cloves 1 chopped green pepper 6 sweet potatoes 1 large chopped onion vinegar, shortening, flour Soak dressed coon for 1 hour in vinegar and water solution. Take coon out and cut into frying size pieces and boil with above seasonings until it just starts getting tender. Take it out and drain good and brown it in skillet. Place in roasting pan and make a gravy out of fryings and pour over meat. Put potatoes around it and bake in oven at 350 until potatoes are done |
