Choco- Carmel Delights |
1/2 cup margaine or butter softened 2/3 cup sugar 1 egg sperated 2 tbsp.milk 1tsp.vanilla 1 cup flour 1/3 cup cocoa 1/4 tsp.salt 1 cup finely chopped pecans 1/2 cup chocolate chips (semi sweet) 1 tsp. shortening In small mixer bowl,beat butter sugar egg yolk milk and vanilla until blended. Stir together flour,cocoa, and salt blend into butter mixture. Refrigerate 1 hour ot until firm enough to handle. Heat oven to 350 degrees. Lightly grease cookie sheet. Beat egg white slighly. Shape dough into 1 inch balls. Dip each ball into egg white roll in pecans to coat. Place 1 inch apart on prepared cookie sheet. Press thumb gently into center of each ball. Bake 10-12 minutes or until set. Mean while prepare carmel filling. Remove cookies from oven,carfully press center of each cookie again with thumb to make indentaion of each cookie. Carefully remove to wire rack.. In a small microwave safe bowl,place chocolate chips and shortening. Microwave on high 1 minute or until smooth when stirred. Place wax paper under wire rack with cookies. Drizzle chocolate mixture over top of cookies. Hint: To make it easier i use a zip loc bag and snip the corner add chocolate mixture seal and squeeze bag for chocolate to drizzle. Makes about 2 dozen. Carmel Filling: In a small saucepan combine: 14 light carmels and 3 tbsp. whipping cream. Cook pver low heat stirring frequently until carmels are melted and mixture is smooth. |
