Raisin Filled Cookies

1 cup shortening
2 cups sugar
4 eggs
2tsp. vanilla
5 cups flour
3/4tsp. baking soda
1tsp.salt
Raisin Filling:
2 cups raisins
2 cups boiling water
1/2 cup sugar
2tbsp. cornstarch
1tsp. lemon juice

Raisin filling: Cook covered until tender the raisins and water. Stir in mixture of 1/2 sugar and 2 tbsp. cornstarch. Cook over medium heat,stirring constantly,until boiling. Boil 1 minute. Remove from heat. Stir in lemon juice and cool.
Dough: Mix shortening,sugar and eggs throughly. Stir in vanilla. Stir dry ingredients together and blend in. Chill dough. heat oven to 400 degress. Roll dough 1/16 inch thick on lightly floured board. Cut with round cutter. Place the bottom pieces on lightly greased baking sheet. Spread rounded teaspoonful of cooled filling on each. Cover the top cookie with and x cut in top. Press edges together with floured tines of fork. Bake 8 to 10 minutes.
