Corned Beef and Cabbage

This is one of the most tradtional meals of the Irish. Corned Beef is a brisket that is picled in brine. It is best when it is soaked over night in water to remove the excess salt

  1 large cabbage        2 onions   2 carrots
            5 pounds corned beef                
           cold water,pepper and 1 bay leaf       
Quater the cabbage and set aside. Peel and slice the vegetables. Cover the meat with cold water and bring to a boil. Skim the top and add peeper and bay leaf with the vegetables. (except cabbage) Simmer for about 90 minutes and add cabbage. Simmer for another 30 minutes. Serve the meat around the vegetables.  Also can serve mash potatoes with this dish.

Potato Stuffing

5-6 cups of mashed potatoes
2 chopped onions
3 chopped stalks of celery
3 tblsp. butter
1 tblsp. poultry seasoning
1tsp. garlic powder
pinch of salt and pepper
4 ozs. herb croutons
1 cup chicken both

Place potatoes in a large bowl. Saute the onions and celery in the butter. Stir in the garlic powder,salt and pepper. Pour over potaotes and add cruotons and both to moisten. Mix well and serve.
