Human Strategy
The Arch Mage (AM) would be my Hero of choice for Humans (HU).  He doesn't have a lot of HP or very much armor, and his attack damage isn't great, but he has several very powerful abilities.
Although not directly damaging any units, his Brilliance Aura would be the most valuable for me.  When I'm using HU, I like to use a lot of casters and his aura increases their mana regeneration rate so they can cast more than enough spells for a battle or two.  Works great if they're trying to use Dryads to counteract Slow magic (the Dryad's will run out of mana while you still have mana to spare!).
His other two skills are both very useful as well.  Blizzard does lots of Area of Effect (AoE) damage, and in the hands of a skilled player can make or break a game.  Water Elemental is a great summonable unit, with lots of HP and attack power to bolster your forces.
His ultimate skill, Mass Teleport can easily contribute to a win for you.  Provided you still have an army, you can teleport all over the map without your opposition knowing, using Mechanical Critters, or Invisible units.
My Basic Set-Up
Build Order
3 Peasants go to Gold
1 Peasant builds Altar (+shift to Lumber)
1 Peasant builds Farm (+shift to Lumber)*
Next Peasant out builds Tower (+shift to Lumber)*
Next Peasant out builds Farm (+shift to Lumber)*
Next Peasant out builds Barracks (+shift to Lumber)
2 Peasants to Gold
Next Peasant out goes to Lumber
You should now have 5 Peasants on Gold, and 6 on Lumber
Footman as soon as Barracks is finished (about 3~4 Footies should do)
Upgrade to Arcane Tower after your AM is summoned (if they're Hero rushing you, this will help greatly)
Peasant from Lumber to build Arcane Vault (Build this so you can use Healing Scrolls)
Peasant from Lumber to build Lumber Mill (near your Lumber source)
Peasant from Lumber to build Farm*
Peasant from Lumber to Blacksmith
Peasant from Lumber to build Farm*
*These Farms and Tower should have been built using the NaTe Formation.
When Blacksmith is done, it's time to start making Riflemen (about 3~4 if everything is going well)
Build Farm
Upgrade TownHall to Keep
Summon Second Hero
Peasant from Lumber to build Arcane Sanctum
Peasant from Lumber to build Farm
Research Improved Lumber Harvesting
At this point, you have to make some decisions.  Do you build another Arcane Sanctum to help make more casters, or use one to research a caster level upgrade?  Do you build a Workshop for Mortar Teams?  I don't usually go Gryphon Aviary but you could at this point.  This all depends on your opposition.  Hu Tier 2 is when you have the advantage.  Hu has weak Tier 1, and mediocre Tier 3.  If you and your opponent both reached Tier 2 units at roughly the same time, and you're able to have a considerable army, you should have a better advantage.  However, micro'ing is all up to you, and only comes with practice.
A lot of people tech up to Tier 3, but never get any Tier 3 units or upgrades out there.  If you're not going to/can't afford Tier 3 units/upgrades, save the Gold and Lumber, and do what you can with your Tier 2 units!  Sorceress' Slow is probably the best Tier 2 ability there is.
Usually, a mixture of Mortars and Sorcs with Mountain King (MK) for second hero works well (my usual path, and a great NE killer), however, you could replace your Footies with Spell Breakers, and brought out Blood Mage (BM) as your second hero.  Research Plating Upgrades for a maximum of 9 Medium type Armor on these guys.  They'll take a pounding from whatever units they're hitting you with, while you can Flame Strike and Blizz their units all day, while your Breakers aren't being hurt since they have Spell Immunity!!  This takes some practice, but I've seen this done and defeat an Orc player with Tauren, Shamans, and Docs.  Make sure to Focus Fire your Rifles.
