Mushrooms : pictures and recipies




I like mushrooms because they don't move, are very tasty, colorfull, easy to get if you enjoy hiking in the forest and good objects for macro photography. In 1996 we started together with collegues from the FMI collecting mushrooms and determining them. Collecting mushrooms to prepare dishes is not so difficult or dangerous. Only a few of the mushrooms are poisonous, several just doesn't taste and quite a lot are good food. I only collect the ones I know myself and if not 100%sure leave them for the experts or enjoy them growing there. at the 17th of october I found Craterellus cornucopioides and Marasmius alliaceus , a fantasic combination for a tastfull sauce.
Creamy Black Chantarelle sauce with garlic aroma
ingredients: ± 50gr. of Craterellus cornucopioides, 2 caps of Marasmius alliaceus, 20gr butter, 50gr fresh goat cheese, 20ml cream, pepper, salt, 1 tablespoon starch and ± 200ml water.
Cut the Craterellus in little pieces and chop the Marasmius. Melt the butter on low fire and add the mushrooms, salt and pepper uder frequent stirring. wait 5 min. before adding the chopped cheese and stir until completly dissolved. Add cream and water and wait until the sauce boils, then add starch until the sauce is thick and liquid. Serve with beef or grilled meat. A red wine (I prefer a Pinot Noir) for the finishing touch !
