Your Craving Is My Command was originally started in 1990 by Chef Michael Hayes and his soulmate Jamie Bassett, as a Personal Chef Service specializing in special diets, especially vegetarianism and veganism. Michael and Jamie created, developed and implemented nutritionally sound and documented diets for clients based on their diets and their likes and dislikes, thus the name, Your Craving Is My Command. In 1999, Your Craving Is My Command took on a new transformation, with Michael implementing nutritional analysis programs into his meal plannings for families, especially those that had eating disorders, food allergies, special diets or other food anomalies. Although through the past few years Michael had returned to the workplace, and Your Craving Is My Command became somewhat inactive, he still authored several articles and was actively involved in assisting people with special diets, especially once Jamie was diagnosed with Breast Cancer that was followed by several bouts of metastacized cancers. In 2001, Chef Michael accepted a position under Executive Chef Scott Monteverde as Executive Sous Chef at a convention center in South Carolina where he honed his skills in preparing fine dining catered events into the thousands. In the spring of 2004, Michael decided to go back to his true love of teaching, accepting Personal Chef clients and caterings with much success. This year alone, Michael has spread his high energied culinary cheer from the shores of Charlevoix, Michigan to his hometown of historic Appomattox, Virginia, throughout the Carolinas, to his new home just south of Knoxville, TN. and quite a few places in between. Your Craving Is My Command is now home-based in Maryville, TN and is serving the eastern Tennnessee and Western North Carolina regions of the Smoky Mountains, although Michael still travels extensively throughout the southeast. Michael also is a partner and on the Board of Directors for RestaurantEdge, a website written by hospitality professionals for hospitality professionals covering all aspects of the hospitality industry in which he primarily works on Research and Development and is the consulting chef.
