Stir-fry Mushroom/Asparagus Sauté

Ingredients:H

Sesame Oil, 1/2 medium yellow onion, chopped, 1/2 lb young asparagus, 8-10 fresh large Shitake mushrooms, 3 tbsp butter, coarse red pepper powder, sesame seeds

Directions:
Chop onion, wash and drain asparagus and mushrooms.

Angle slice asparagus, (I usually get asparagus that are about 5" and cut into 3rds.) Slice mushrooms.

Cover bottom of large frying pan with oil, heat on high until real hot, add onion, then asparagus and stir fry about 1 minute, turn heat to medium add mushrooms and stir fry about 1 more minute.

Turn heat to low, expose bottom of pan in one area add 1 tbsp butter, move mix to cover butter. Repeat 2 more times in other areas of pan, stir well until all vegetables have even coating of butter/oil mix.

Add red pepper powder to taste, (The more the better in my opinion) COVER, and cook two more minutes on low heat. Mix well again, put into serving dish and sprinkle with sesame seeds.

* This is a wonderful side dish or can be served over steam rice for a vegetarian meal. Try it, you'll love it (unless you don't like asparagus or mushrooms)
