Baigan Fry
Ingredients
Long Baigan(Eggplants) 1lb
Onions chopped 1/2cup
Tomatoes 1
Ginger Garlic paste 1tsp
Chilli powder 1/2tsp
Tumeric 1/4tsp
Curry leaves 1stem
Mustard seeds 1/4tsp
Green chillies 2
Cilantro chopped 1/2cup
Salt and Oil

1.Wash and cut the egg plants in long strips.Drop in cold water until its time to cook.
2.Saute onions with mustard seeds,curry leaves,green chillies for 3-4minutes and add ginger garlic paste.saute for a minute .Add chopped tomatoes.
3.When tomatoes are tender add the eggplants  and remaining spices.
4.Stir occasionally cook  untill eggplants are tender.
5.Garnish with chopped cilantro.serve with rice or roti.
