Eggplant(Bhaigan) Chutney

Ingredeints
Small Eggplants 6
Ripe tomatoes 2
Onions 1
Chilli powder 1/4tsp
Turmeric 1/4tsp
Coriander chopped1/2cup
Curry leaves 2stems
Dry Red chillies 2
Zeera(cumin seeds) 1/2tsp
Salt
Mustard seeds,curry leaves and zeera for Tadka 1Tbsp
Oil

Method
1.Saute onions and add ginger garlic paste.
2.Add tomatoes and egg plants.Add the chillipowder and turmeric.
3.Cook until tender.Add salt.
4.cool and grind to a paste
5.Prepare tadka by heating oil and adding mustard seeds,curry leaves, and zeera after they start splattering mix with the ground eggplant.
6.Garnish with chopped coriander.serve with rice or khichdi
