Grilled Chicken Salad


 Ingredients
chicken breast halves(boneless and skinless) 4large
 butter  1tbsp
 celery diced 1cup
 olive oil 3tbsp
 Soy sauce 2tbsp
 Hot chilli sauce 1/2tsp
 carrots diced 1cup
 radishes diced 1cup
 cucumber diced 1cup
 fresh orange juice 1/4cup
 Salt and pepper -- to taste
 Dijon mustard 1/2tsp
 parsley chopped 2tsp

Preparation

1.Rinse the chicken breasts, pat dry and place in a bowl. Stir in the butter,1 tbsp olive oil, soy sauce, hot sauce,salt and pepper. Marinate, covered, at room temperature for 30 minutes or in the refrigerator for 2 to 3 hours.

2.For the salad dressing  combine the orange juice, mustard, sugar, salt and pepper to taste, and the remaining 2 tbsp olive oil. Set aside.

3.Grill chicken on a grill pan for 4 to 5 minutes each side or until cooked through.Allow chicken to rest for 2minutes before slicing chicken through the middle lengthwise from left to fight.

4.To serve, toss the celery, carrots, radishes and cucumber in a bowl with the salad dressing.Top with sliced grilled chicken. Sprinkle with parsley.
