Kibbeh
Ingredients for the  shells
cracked wheat 2cups
minced beef 1lb
onion 1
black pepper 1/2tsp
salt
Ingredients for the stuffing
onion 1
pine-nuts 3tsp
Minced beef 1lb
Black pepper 1tsp
salt
Vegetable Oil for deep frying.
Preparation
1.soak the cracked wheat for 30minutes in water. Drain the water.
2. Mix  the meat, chopped onion, salt and pepper in a food processor and blend until well mixed.Add the cracked wheat and blend until the mixture is soft enough to work like a dough. Knead well by hand
3.To make the stuffing, saute the onion in oil until translucent, then add the pine-nuts and fry till golden. Stir in the meat, salt and pepper. Cook until meat is all done.
4.Make the egg shaped balls.First wet hands with some cold water. Take little of the mixture and roll into a ball. Make a well in the centre with your finger and put a spoonful of stuffing in to the well and close it.Roll it and make the ends pointy. Repeat this with the rest of the mixture.
5.Heat the oil for deep frying.Fry the kibbeh until brown and crispy. Serve hot. Makes 20.
