Lentil Soup



Ingredients:
Chickpeas 8oz can
Canned White kidney beans 4-6oz
Whole red lentils 1/2cup
Onions chopped 2
Garlic cloves minced 2
Tomatoes chopped 2
Garam masala(spices mix) 1tsp
Chilli powder or cayenne pepper 1/2tsp
Olive oil 1tbsp

Preparation
1. saute onions in olive oil until light brown . Add garlic and ginger sauté for a minute.
2. Add  lentils, chick peas, white kidney beans, diced tomatoes, carrots,  garammasala, cardamom, cayenne pepper and cumin and stir. Add 3cups of water.Bring to a boil for a few minutes then simmer until the lentils are soft.
3. take half of the cooked lentils and puree  in a food processor or blender. Then mix it back in to the rest of the lentils. simmer for 2minutes and serve with pita bread and a squeeze of lemon on the top.
