SCRAMBLED EGG SALAD 

 
Ingredient
 eggs 6
 mint finely chopped 1Tbsp
 parsley finely chopped 1tsp
 Oil 2tsp
 carrot 1large
 onion 1medium
 tomatoes 2
 celery chopped 1/2cup
 cucumber 1/2
 salt and pepper
For Salad  Dressing

olive oil 1/2cup
vinegar 3tsp
lemon Juice 2tsp
salt 1tsp
dry mustard 1/4tsp
 paprika 1/4tsp

1.To make Dressing: Combine all its ingredients and shake well in a screw top jar. Refrigerate for at least 2 hours. Shake well before using.
2. Lightly beat the eggs, season with salt and pepper and add the chopped  mint and parsley. Heat some oil and pour the egg mixture. Scramble them..When cooked turn off heat and allow the eggs to cool.When cold, cut into small pieces.
3. Grate the carrots, chop the onion, slice the tomatoes and cucumber and  mix together all these ingredients with the chopped celery.
4. Gently mix the egg pieces with the vegetables.
5. Pour on Salad Dressing and toss very gently. Serve .
