Shrimp Wontons
uncooked shrimp 2lbs
green onions, chopped 2cups
 egg white 2
coriander, chopped 1/2cup
soy sauce 2tsp
 ginger finely grated 1tsp
 Oriental sesame oil 1/2tsp
cornstarch, for dusting baking sheet
 wonton wrappers 25
dipping sauce
 soy sauce 4tsp
 granulated sugar 1/2tsp
 hot chili flakes  1/2tsp

Preparation

1.  finely chop or mince the shrimp.  mix in green onions, egg white, coriander, soy sauce, ginger and sesame oil.

2.Lightly dust a baking sheet with cornstarch. Unwrap wontons and keep covered with a moist cloth
.
3.Fill wontons one at a time. Place 1 tsp. of filling on one side of wonton wrapper. Moisten edges with water. Fold wrapper diagonally over filling to form a triangle. Firmly press to seal sides.
4.Bring a large pot of water to a boil. Add wontons, six at a time. When wontons rise to the surface (about 3 minutes) remove with a slotted spoon. Place on a tray in a single layer, cover and keep warm. Cook remaining wontons.
5.Make Dipping sauce by  Stirring together soy sauce, sugar and chili flakes.
6.serve wontons warm with the dipping sauce.
Cooking tips:
1.For crispy wontons .deep fry in vegetable oil until light brown.
2.To make it all vegetarian.Add some grated carrots,chopped capsicum and peas instead of shrimp.Or try with cooked chicken and ground lamb to make chicken wontons or lamb wontons
