FRIED EGGPLANT


 Ingredients
eggplant 1large
salt and pepper to taste
egg  1
 milk 1/4cup
soy flour 1/2cup

1.Wash eggplant and cut in slices about 3/4 inch thick. Peel each slice and cut into strips. Sprinkle strips with salt.
2. Combine 1 beaten egg with milk, salt and pepper. Roll strips in soy powder. Dip in egg mixture and roll again in soy powder. Allow coating to dry some before frying. 3.Deep Fry in Oil. Drain excess oil on paper towels. Sprinkle with any seasoned salt and serve hot.
