Ras Malai
Ingredients:
To make Cheese
Whole Milk  1gallon
Vinegar  or lemon juice 2tsp
To make the syrup
Milk 1/2gallon
Sugar 2cups
Chopped  Almonds and Pista 1/2cup
Saffron one pinch
Method:
Bring milk to a nice boil
Add  vinegar or lemon juice and stir until it curdles.strain it in a cheese cloth to separate the liquid.Keep it tied in the cloth for atleast 2hrs to strain all the liquid.
Make round patties with the strained cheese.Boil 3cups of water and add the cheese patties. boil until patties are fluffly.Strain the water and keep aside.
To make the sauce to dump the patties.Boil milk and add sugar.Add saffron.cook until the milk thickens(reduces to half it quantity).cool a little.
Add the cheese patties in to the warm milk.When cool refrigrate for 2hrs before serving it .garnish with chopped almonds and pista
Cooking tip:Try making the same recipe with ricotta cheese instead of home made cheese to save time.Spread the ricotta cheese in a baking try and bake covered for 25minutes at 350F.And cut the cheese in to desired shaped and dump in to the sweet milk .
